Egg Pockets

This a very simple and quick dish, as they all have been, focused around eggs.

Being in college forced a new appreciation of eggs on to me. Anything that I could get 12 of for just a $1.50 was a good purchase.

Ingredients

2 eggs
1 pita
6 pieces of pepperoni
2 tablespoons of pasta sauce
1 tablespoon of parmesan cheese
Olive Oil
Salt
Pepper

Process

1. Heat up a frying pan to medium heat with a little bit of olive oil.
2. Toast the pita in the frying pan.
3. After the pita is finished toasting, add a little more olive oil.
4. Rip or cut the pepperoni into small pieces and place in the pan.
5. After the pepperoni has had about 30 seconds to a minute to cook, add the eggs to the pan (you can whisk the eggs up previously in a bowl, or just scramble them in the pan).
6. Scramble the eggs in the pan.
7. Before the eggs are fully cooked, add the pasta sauce and parmesan cheese and salt and pepper to taste.
8. Cut the pita and have and you should open them up like pouches.
9. Put the scrambled eggs into the pouches and enjoy.

Poached Eggs

Poaching eggs is a rather tricky procedure. I know that I’ve never successfully done it the “correct” way. Luckily, there is a very easy way to make great poached eggs.

Ingredients

1 egg
Oil or non-stick spray
Microwavable saran wrap

Process

1. Fill a microwavable bowl up with water.
2. Take another bowl, place a sheet of saran wrap in it.
3. Spray or oil the saran wrap.
4. Crack egg into the saran wrap.
5. Take the saran wrap and twist so that it closes at the top around the egg.
6. Place the saran wrapped egg in the bowl of water.
7. Microwave for around 2 - 2:30 minutes (closer to 2 for runny, more than 2:30 for hard).
8. Remove egg from saran wrap and place on toast, english muffin. or just eat by itself with a little salt and pepper.

Enjoy a perfectly poached egg.

Shell Pasta with Corn

Sometimes when you’re on the dry side of the money fountain, you have to use what you have when you cook. Luckily, that can lead to surprisingly delicious results.

This is a very basic and simple recipe.

Ingredients

.5 can of corn (or about one cob of corn, cooked and off the cob)
1 cup shell pasta
1.5 teaspoons of olive oil
1 tablespoon parmesan cheese
1 teaspoon salt
1 teaspoon pepper

Process

1. Boil water and place pasta in the water.
2. After the pasta is finished cooking, drain the water from the pot.*
3. Turn the heat off and add the oil and corn.
4. Add the rest of the ingredients.
5. Mix and allow the parmesan cheese to melt.
6. Serve.

*You don’t need a colander to do this, you can easily do it by holding the pot lid, a plate or even a slotted spoon up to the pot to keep in the pasta and pouring the water out.

The great thing about this recipe, besides its taste and absurdly low cost, is that the corn will get stuck in the shell pasta making each bite delicious.

Baking Corn

This is the tip that started it all.

Corn is one of the most simple things to cook in the world. For some reason, people make it more difficult than it is. Or do sacrilegious things like boil it.

There’s nothing worse you can do to corn than boil it.

The easiest, and one of the tastiest, ways to prepare corn is simple:

Ingredients

Corn on the cob still in the husk.

Process

1. Preheat oven to 350 degrees.
2. Wash corn in husk.
3. Place corn, still in husk, directly on the oven rack.
4. Bake for about 30 minutes.

They should be perfectly cooked and absolutely delicious.
